You will find all the paintings in those folders:

obj\txt16\
Look for files called "paintXX.png|gif" where X being a number in the range of 0 - 9.

Just started playing, and I'm hugely impressed. All the small details (the bell on the shop door), and the not-so-small details (a horse!) make this feel like a living, breathing world. A fresh take on the Thief Gold we know and love.
