How many elementals are there in Thief world?
I have seen fire elementals in Thief - the dark project, The Lost City. According to The keeper library ( by SneaksieThiefsie ), the fire elementals were created in order to protect the emperor, but later turned against him and the people.
I have also seen elementals in pagan missions ( Trail of Blood, Thief 2- the metal age ). But they are harmless.

There are also water, air and earth elementals in Thief Gold. (I think, I haven't played TG though, I have just read this somewhere.)

Don't confuse those glowing balls in Trail of Blood and in Thief 3 with fire elementals. Those are Will O Wisps, they're basically energy beings that float around and light places up.
Other then that, I can't recall any other 'Elementals' besides the fire ones in The Lost City and The Maw of Chaos.

Do you remember T2x? There are fire elementals, earth elementals, ala bala... some of the elementals are very dangerous cuz they are invisible

In the Canonical Thief world, there are only Fire Elementals, and they only appear in the Lost City and in The Maw of Chaos in Thief 1. There are also Fire Shadows, again only in Thief 1 (Down in the Bonehoard & The Haunted Cathedral).

Other than fire,you can at least encounter air elementals that are summoned by Thief: Gold air mages.

Fire shadows appear in THC and the Bonehoard (TG only, not TDP). They leave a fire arrow every time you kill them. I think they were introduced to allow you finish these missions if you use up all your fire arrows (you need them to light torches in both missions).
Arguably, the globes of wind the air mages shoot can be considered air elementals.

I think in Dromed they had listed fire elementals and air elementals.
