I want to know if background ambiance sounds (in the game and in the menu) have any standard names. And, if not, how can I find them. Some FMs have such annoying sound background that I want to turn it off.

For FMs with custom music, you can delete the 'snd' folder in the FM folder :D
If an FM is using a stock sound for an ambient, you would have to delete the entire audio archive from the base install. This file is called 'snd.crf'. :D
If this is not good, you can put the ambient volume slider to zero in the game. :D
Or learn to use DromEd and delete the ambienthacked objects yourself :D

I have found those crazy sounds there. I really hoped that I would be able to delete them without hearing them again.

Absolute trash under Linux through wine and on 4k monitor. Unusable. Without a chance. Not like DromEd have a nice GUI otherwise, but in my case, it is just horrendous.

To be actually helpful, the stock menu background ambiences are metalp1.wav metalp2.wav etc. FMs with custom background music will have files named the same.
In-game FM ambients are just named whatever, no standard. Also the volume slider is not reliable because half the time, "ambient" FM tracks are put on the "main" sound channel so that the ambient slider doesn't do anything.
And yes, sometimes FMs' background music or ambients are obnoxiously loud. Just cause there isn't always an easy solution, doesn't mean it isn't an issue. Even I've been annoyed at times as I've stated in my videos. One time I even went in and literally took the audios into Reaper and lowered their volume it was so bad.

One way to identify ambients is to look at the size of the files. Ambients have a tendency to be a bit bigger than other sounds. Another hint can be that sometimes, ambient sounds have higher sample rates, or other stereo/mono recording than standard voice files. You can also tell Windows to display the bit rates for sounds in Windows Explorer, which also might give a hint as to which files are just Garretts babblings and which one are the ear-shattering ambients. However, since you hinted at that you might use Linux, this approach may not be possible.
In the end, you can only go through the SND folder of the appropriate FM and look for a folder ambient in there, then for files in SND itself, and then maybe in SFX, T1SFX, or even in garrett, as a last resort. If all else fails, you will have to play and listen to any sound that you find suspicious for some reason.
If the FM is a multi-language one, you can also often rule out sounds that are in language folders, since usually, ambients are the same regardless of the language you play in.

Are there any particular missions which blow your eardrums to pieces? In some cases I have lowered volumes for certain sounds as well, or even exchanged the sound files with others that do not torture my ears so much. With a bit of luck, I might be able to tell you which sound file it is in some cases.

I have managed to delete all that craziness with a "play and listen to any sound that you find suspicious for some reason" method. Not fun, but the result is totally worth the effort.
I'm talking about the
"Fables of penitent thief" if you're curious. But this issue exists in many missions to some extent. But this mission was just killing my ears and brain. Patriot, for example, had a very strange Main Menu theme. There is some FM author (from Spain or Portugal, I suppose. Don't remember his nickname. He makes very diverse, mostly non-Thief related FMs) who uses in all his FMs also very strange and unpleasant for my ear music theme to the Menu.
I really wish FM creators were more attentive and marked sound files correctly to make the option's slider work. Or at least would name the filenames in an obvious way. Like "main_menu_theme.wav", for example.

Yes, I can understand your ears' pains. In "Fables of the Penitent thief", I could bear the sound, but I had to use that patch which removed some of the texture animation overdose. In "Patriot", I first replaced the Menu theme (SND/music/boogie.wav, I think) also played when viewing objectives or maps) with some other ambient sound from the campaign, and later just lowered the sound file's volume. The same I had to do with the "Mission Impossible" theme (I think - SND/music/thnt.wav and thntfinal.wav, anyway) used during a part of the prison escape mission - I did not even hear the guards yell anymore in the North tower there. Not good if they're just behind you and ready to poke holes into you with their swords.:sweat: And while I usually can live with the music (and sound volumes) Cardia (must be the author you mentioned) selects for his missions, there are a few exceptions there as well.
Something that makes this more complicated is that there is reason to assume there are different sound levels for ambient relative to other sounds in Thief versions sold in different countries. Although I don't know of anyone who proved it, I also think that these differences exist between, for example, the english and german versions of "Thief 2". Thus, what might be annoying for someone using the german version, could be acceptable with the english version, for example.

Sorry, but that would not be wise. Before deleting the 'snd' folder in the FM folder I'd verify if there are some custom conversations. If so conversations or other important noises would be mute. The 'snd' folder could contain stock WAVs from Thief1, too (such as Hammer voices 2-3).

Haha! :D This rings a bell but I can't quite remember the dude you're talking about. The menu music was some obnoxious WoooooOOOOoooo.................... WoooOOOoooooo............ TCH TCH TCH CLAP CLAP CLAP nonsense. That would make me quite GRUMPY™ as well :p .
