If you are careful and if you want either the frog or burrick motions and are willing to make the voice sound files/schemas appropriate to your beastie, yes.
I think I can go from burrick to dragon with minimal change

I take that back. So far anything I do to the file to change the model screws it up such that it shows up all scrunched up and broken in the game, and that's if it builds a bin at all. I've wasted enough time on this. I need to admit defeat and do something else. Oh well.

That remind me your frog story! :p
Can I try? ^^
Maybe I won't succeed that time... but... We never know! ;) (I spent an entire month to resolve your frog... Perhaps this one will take more time! xD But I want to try anyway! We don't know! :) )

It's your time and effort. I'm sure that there are many others who will appreciate it if you succeed.

Alright! ^^
So, do you have a file that you have started to work with? Perhaps you were close to the goal! Sometimes, planes and models are vicious and mess everything up just for a single unit!
Or should I try it from the several links here?

Start with Shadowspawn's stuff. That supposedly worked at some point.

If anyone ever tried to tackle this again, look for a file named JPBURRICK.ZIP from schwaa's old site. It might have usable files that can be modified successfully. Unfortunately I never downloaded it, but there is a tutorial of his at thiefmissions which references this file and also has a picture of the burrick with limit planes being adjusted.
