Got some new thing called a quad steak burrito. It was decent enough.
For $7, I think I could've gotten something a little more substantial than the one burrito and drink, though.

It's most likely a cream cheese sauce. Yogurt-based sauces are more typical of Indian cuisine.

I'm gonna have to concede this to ZB, folks.
It's not yogurt, nor yogurt-based. It is cheese based.
The cream (aka the nogada) has the following ingredients:
* Castilla nuts soaked in milk.
* Almonds also soaked in milk.
* Goat cheese.
* Milk.
* White cream.
* Onion.
* Sugar.
* Water.
* Cinnamon.
* Dry sherry.
* Salt.
The filling for the Poblano chili is another story.

A Wikipedia look-up says it's a chilli stuffed with ground meat, fruit, and spices and topped off with a walnut-cream sauce. That sounds delicious and it looks a helluva lot better than a stuffed aubergine.
