Dude, that looks like photoshopped crap, what taco ever looks like that? However, all this mexican cuisine talk has inspired me, so tonight I'm cooking Shredded Chicken and Chipotle tacos, with homemade flour tortillas and Pico de gallo on the side.
One concession that I have to make is the fact that chipotle chilis are non-existent where I am, so will have to substitute some normal diablo style ones.
also this, trying to find masa flour to make corn tortillas is impossible, except online where I am paying like a $30 shipping fee for $3 worth of flour?

If you want to be extra original, use corn flour, son.
Tortillas are originally made from corn.
Though normal flour tortillas are cool too for certain types of food, such as burritos! (Sonora style burritos...om nom....Sonora's a state in Mexico).

Yeh did you see the bit about me not being able to get masa harina? Anwyay flour tortillas are perfectly acceptable in the northern regions of mexico. Also, its not an experiment, I cook mexican food frequently, and its a damn sight better than most of the shit tex-mex restaurants you get here. The trouble is trying to source ingredients which are just not really available. Monterey Jack cheese, or Asedero, or numerous varieties of chilis, the list goes on.

Piggy - Nice. Though TJ got slightly wrong the date of the recipe. Mole was made in the XIX century if memory serves. Not 100% sure about the recipe, but that's only because it has a fuckload of ingredients.
