If you can find it cabrito is the bees knees with mexican cuisine. In one of my forays into Nueva Laredo I found a place that had them spit roasting in the front window and it was the best land animal I've eaten in my life. Follow up experiences with the stuff in other resteraunts has been less magical but still the most damned delicious thing on most menus.

Pablano chilis stuffed with pork and veges then fried, man they are good. I cook a lot of my own mexican, I guess you could call it 'Oz-Mex'. I make tortillas and breads from scratch, the difference between those and the pre-made ones is astounding. Mexican cooking, from what I have learned, is really quite simple, as far as ingredients go.

Subjective Effect - Well, for starters, Mexican cuisine varies considerably from north, center and south. For example, the Pacific-side states offer a rich and tasty variety of seafood dishes. A few examples:
