Let's see... (In no particular order)
Song of the Caverns: Used a gas arrow on the Hermit, seeing as I didn't want to risk him hurting me (Like I knew he didn't have any weapons and would give me a key/map).
RTC: Clicked the fountain, went "oh great..no holy water, and now it's dark.."
All I can think of atm..

The first time I got into Bafford's house (via the sewers), I didn't know about the blackjack
I attacked one of the guards with my sword. Obviously, it didn't kill him (and I am still rubbish with the sword).
But because I had the element of suprise on my side, I was winning, and then suddenly he RAN off!
Great, I thought! I've won that one.
Then he came back with his mate and they both killed me.
-------------------
Although I knew it could be done, I never used the function keys (F1, F2 etc) to bring up my lockpicks, I always just cycled through my inventory instead
-------------------
The first time I used a flashbomb (in Bafford's), I thought it was meant to light up your surroundings so that you could see (for a short time).
It wasn't until The Sword that I realised it was used to stun guards.

The first time I played RTC (played the whole game in expert right from the start), it took me more than a week to complete because I had no idea what a "haunt" was. ANd then of course I thought that all undead could only be killed with fire arrows, just like zombies (okay, today I know of a dozen ways to destroy them, but not back then).
Finally, I got the cathedral so full of restless undead that I couldn't make a single step without being notices. I even restarted the mission :-p

I don't think that I've ever been a stupid thief.........well....maby once.
I was running around a corner to avoid a meeting with a zombie.....and met two haunts comming my way.
I then pannicked, trying to retrace my steps.
Oh, did I mention that I was weaponless?
The next thing that I saw was a scull and cross bones.:erg:

I am so amazed at how smart youguys are. So many of you figured out about the lockpicks, knocking out creatures besides humans, what weapons you could use on haunts, all that stuff after only 1 or 2 times through the game! I didn't figure out the right way to use a lock pick until about my 5th time through. BJing non-humans I probably got the 3rd time. What weapons to use on undead I had to be told!

I tried to blackjack a haunt.
A dazed, pissed-off haunt is never a good thing.

The next thing that I saw was a scull and cross bones.:erg: I can top that for idiocy. Was sitting at the bottom of the St. Tennor lift-shaft waiting for everything to go quiet. Soon as it did I started up (unable to hear anything for a while for the din of the motor). Got to the top and heard the jangling of a nearby haunt. Executed what I thought was a very smart "double round the corner" manoeuvre - and ran straight into him. He looked at me for a couple of seconds - then sliced me up like a salami.

take this!
play Lady Whitman Disease I got mad for an hour trying, at the start, to find a way to unlock any of 2 doors, no joy!
I had the key to one of them in my inventory from the briefing! :eww:

I don't remember the stuff I did when I first start playing Thief, but I still manage to blind myself in T2 just about every time I use a flash bomb because I got into the habit of not having to worry about it from T1. Fortunately however, each time I've blinded myself I managed to KO the guards I was trying to blind through simply swinging in their general direction.
/edit
Well I remembered one thing that was kind of stupid. In RTHC (before I knew flash bombs could hurt undead) I walked in the front doors and decided to stroll in through the next set of doors because I rememered there being a lot of shadows in there when I first saw the inside in THC. So I open the door and waltz in only to find myself eye to eyesocket with a haunt. We stand there looking at each other for a couple seconds and the other haunts in the room turn to look at me as well. So I just kinda smiled and chuckled one of those "Oh shit..." chuckles and started walking backwards towards the door when they all set into a run prompting me to turn tail and bunny-hop to the ledge at the back of the cathedral with them laughing at me the whole way. I jumped to the ledge and released 'jump' too soon and of course fell. As I tried again the haunts began filleting my back and very nearly killed me. However, I managed to climb out of their reach (I shudder to think what it would have been like if haunts could climb) and stood there looking at them (there were three IIRC) for a couple minutes wondering how I was going to get out of this mess. I ended up using most of my inventory on them to escape with my life. For a while I thought I was doomed because my broadheads didn't seem to be having any effect, until the one I was shooting at finally went into his injury animation just before I delivered the last couple of arrows. What a relief that was.
