For me, in the rock category, the Painkiller soundtrack wins.
And not sure where to put the Splinter Cell game soundtracks, but they're all pretty awesome.

I rather enjoyed the Doom and Hexen soundtracks. Dunno what genre you'd put each into.

I don't get why people like the Deus Ex music. Its bad space synth mood stuff, and not just bad, extra bad. I loved it in the game but that's because it fit well but on its own? :eww:

Quake 1 and Fallout introduced me to dark ambient.

For my part most game music doesn't work on its own. But it does help if it's kept low anyway. That's why a simple, even cheesy, production is mostly a good thing. So DX's music works for me and Fallout 3's doesn't, because that one demands too much attention for it's own. And it's not very carefully chosen anyway.

Oh yes. Absolutely. One exception to the rule. This one stands for itself.
Vampire Bloodlines has a nice tune in the Hollywood level.

Part of why I enjoy the music is because it reminds me of the feel of the game, without having to play the game itself. Out of context, soundtrack music can be hollow sometimes.
Sadly, this often means that, like nearly every list thread here, it can be collapsed into a 'list your favorite games' list. Still fun, though.
Per iTunes, these are the most frequently played game soundtrack albums for me:
