Max Payne 2 has few nice music pieces and so does Hitman series. And let us not forget Homeworld 2 and Rome Total War.

Oh, Guild Wars is Jeremy Soule's finest moment. Although his Dungeon Siege theme comes quite close.
Serious Sam's "WAAAAAAAAAARRRRRRR!!!!" heavy metal track always makes me chuckle.
Some old N64 games had classic soundtracks, such as Goldeneye and Diddy Kong Racing.
And going with Nintendo, the various Marios and Zeldas always have fantastic music. I can guarantee that if I play even a short refrain of Mario Calypso in the office, everyone will be humming and whistling it for hours after.

Most of the soundtracks I like have already been mentioned (namely Unreal, UT, SS2, Painkiller, Quake 2).
Some of my all time favorite game soundtracks are the Serious Sam ones (First Encounter, Second Encounter and 2). Since I first played SS:FE back in 2001 I've loved how the music, both peace and action, fit the location and time. This became especially good in SS:SE due to its more varied locations and timeframes. Serious Sam 2's story is nothing but silly bullshit (why did Croteam have to turn the series into some silly joke?), but the music is still great nevertheless.

Oooh I totally forgot about Motorhead, that also belongs on my list, it's great!
EDIT: also, Earthworm Jim 3D was a pretty crappy game, but the music was a lot of fun.

Although I love the Thief games, I didn't find their soundtracks appealing(except for the Cradle), most of the time the music is silent.
I worship Jeremy Soule,hehe. I haven't heard any other fantasy game music pieces that other composers did that come even close to his work. Same can be said for the Metal Gear Solid theme, it moves me every time I hear it.
