Unreal was the last game to really wow me with graphics. Sure, there have been improvements afterwards, but they haven't really presented as big a leap from previous technology.
Besides, I value gameplay and performance way above graphics.

I'd agree when it comes to "gee, whiz!" graphics. However, when it comes to creating a credible world, graphics are important - the engine (or rather how effectively it's used) is important, as is art design. E.g. if
STALKER didn't give me that strong "being there" feeling, for which visuals are important, it wouldn't be nearly as effective.

Oblivion, Stalker (+weather mods), FarCry 64bit, Thief DS (JohnP's textures), F.E.A.R., Bioshock (but PC was weak for full shaders)
Oh and yes, Unreal was unforgettable. And it looked awesome even in 16bit colors on my old 400Mhz Celeron/64MB RAM/3Dfx Banshee.

Xenon 2 had mindbogglingly amazing graphics for its time. It really was years ahead of everything else in 1989.

I do like the nostalgic aesthetics of good 8-bit/16-bit sprites. And let's not forget some of the classic VGA adventure games. The adventure that I still like best in visual terms is Monkey Island 2.

Stalker - the most photo-realistic graphics I've ever seen in a game. Crysis is colourful, smooth, detailed, and beautiful, but looks cartoon-like if compared - too many exaggerated features specifically to make it look shiny and eye-catching: oversaturated colours, overdone shader effects, Sun 10 times bigger than it is, things like that.
