Brothers in Arms (1): Road to Hill 30 & (2) Earned in Blood. Terrific games with strong narratives, fleshed out characters and great presentations - they are pretty much Band of Brothers: The Game series. They are quite unforgiving and closer to what a PC audience would expect from a sim FPS, despite being designed for PS2 and Xbox.
I totally second that (
Road to Hill 30 anyway, I have yet to play
Earned In Blood) but I'm surprised to learn the console thing. I always thought they were primarily PC.
What about the third,
Hell's Highway? Is it as good as the first two?

I don't care if I'm labelled as hypocrite for this, but I loved
Rainbow Six: Vegas 1 & 2. Out of all the console FPSes, these games are by far a league ahead of all the competition. The gameplay possesses a lot more depth and actually require the use of brain cells unlike braindead spamfests like Call of Duty. The cover system actually works really well and is a great work-around to the lack of leaning.
I have Vegas 2, and it's very fun, despite having some bugs and very odd design decisions. The best thing about it in my opinion is that the campaign really feels like a movie, much like how CoD4 has been described.

I'll second (third?) Insurgency mod for HL2. It is still played and tactics are the most important aspect.

I highly recommend Vegas 1 in that case, it's superior to its sequel by a bit.
The only problem is that the optimisation is horrendous. You need a 3rd party tool to enable 16:10 resolutions; it runs like a dog; has no in-game AA and forced driver AA yields a significant performance hit; no 5-button mouse support.
Ubi Montreal learnt their lesson and did a good job porting Vegas 2.

Death to every Rainbow Spear after Rogue Spear. A painless neckshot for Rainbow Six 3. The games after that, tongs and saws. I can perfectly understand you have to dumb down games to win over greater crowds who want instant gratification. But why Rainbow Six, it was my baby :(

Fixed and IMO Raven Shield was still quite good, but I agree with you anyway. Also, I second SWAT3-4, GRAW1-2 PC, ArmA2 and OFP.

On the console side, R63/Black Arrow were awesome. They are still popular on XBOX Live! (though I let my membership lapse last month). Pretty much as good as the Raven Shield/Athena Sword/whatever the Hell the free one was called.
Stay the FUCK away from Lockdown and the Xbox exclusive Critical Hour.

No, the most important aspect is everyone on the Insurgent team going "Allahu Ackbar!" over their microphones when they win.
