I just got a Wii & a couple games. What are the best games? A lot of 'em seem geared toward children.

Boom Blox is good fun. Kind of a reverse Jenga.
And for a very not-for-kids game, you might check out (
http://www.youtube.com/watch?v=ncuR0qZpglc) No More Heroes, which was made by the same team that did Killer 7 for the GameCube and Contact for the DS. They're very into surreal, often fourth wall breaking games.

Resident Evil 4: Wii Edition - The definitive version of that game. Basically the uncompromised Gamecube version + the PS2 extras (minus the horrible downgrades of the PS2 port) + sweet near-mouse accurate aiming.
Metroid Prime Trilogy - If you've never played Metroid Prime 1 & 2 on Gamecube, then by all means get this upgraded port featuring near mouse-like accurate aiming, higher resolution textures.
The House of the Dead: Overkill - This lightgun game is very tongue in cheek, never taking itself seriously. Gameplay is solid, an excellent party game. It's themed after Grindhouse cinema.
Tenchu 4: Shadow Assassins - I had a lot of fun playing this stealth game. YMMV of course, don't go expecting the 2nd coming of Thief or whatever. Made by Aquire, the original developer behind T1&2 for PS1, it redeems the Tenchu series after years of receiving so many shit games.

I really liked Red Steel—it controlled well, had nice graphics, atmosphere, sound design... it was a bit rough around the edges, but once you shut off the wii-remote speaker (which was the cause of the cursor issues every reviewer complained about) it was surprisingly smooth and satisfying. Ok the sword fighting sucked, but there wasn't even very much of it.
Honestly it reminded me most of Rare's N64 shooters. And I'll bet it's cheap now, too.

You simply need Okami, these idiots made the perfect Wii game before anyone heard of the Wii and the Wii version is more then a little bit better then it's older brother.
Second No More Heroes, it's weird but it's fun. World at War plays pretty good if you want multiplayer.

The "geared towards children" misconception lies mostly in the fact that the Wii is where every worthless gimmicky shovelware game gets dumped.

Looking at my list, I can second the Metroid Prime Trilogy, although I've only actually played the Wii version of the third game.
The obvious choices: New Super Mario Bros Wii and Super Mario Galaxy.
Fire Emblem: Radiant Dawn is fairly good as a strategy RPG, but beware that it is actually the sequel to the GameCube Fire Emblem. The plots do stand apart, but you may want to play the GameCube one for the backstory.
Zack & Wiki is an awesome adventure game you'll probably never find :(.
If you haven't played Pikmin on the GameCube, pick up the New Play Control version of it; Pikmin is still an awesome game.
I've also heard good things about Little King's Story and A Boy and His Blob, but I have yet to pick them up for myself.
On the Wiiware front, my choices are:
World of Goo (if you don't already have it for PC)
Mega Man 9 (!)
Space Invaders Get Even... but be warned that it can get to the price of a regular game if you buy all the levels.
Toki Tori
And the Art Style games are fun too.
