Having never played the original monkey Island, do you think the gameplay stands the test of time well enough for me to buy and play them?

I don't think any of us can answer that objectively, but I'll go out on a limb and say yeah, it does. Clever (though occasionally obtuse) puzzles, great and surprisingly fitting voice acting, funny and interesting story, and nice graphics. If you like adventure games at all, you have no reason not to play one of the defacto classics of the genre.

Hmm the first one is a bit bland in terms of humour and style, but is nice enough as an experience. The second one seemed a lot better from the little i played. I'll have to go back to that one day.
'Terms of this graphical update, it's half nice half not so - ain't too keen on the look of the characters themselves, especially that of guybrush. Backdrops look nice though. Ah well, you can't have everything.

I wish. $25 is too much, not because I don't think it's worth it, because I'm sure it is, but because I don't have that kind of money right now.

Definitely. Monkey Island, in my opinion, falls into the realm of the classics from the height of adventure gaming. Great stuff.
