My tactic for guardians has been "run as fast as I can in the other direction".
I actually haven't done much combat in this game. I usually just avoid enemies.

Guardians are easy, so long as you're using ancient arrows. Buy about 20-30 of them, and go running around Hyrule Field, killing them all in one hit.

I sat down one day and practiced parrying on Lynels until I could do it, and it makes fighting them a lot more interesting.
My favourite tactic for the big guardians is to cut their legs off one by one. That way you get more ancient parts, and also they can't chase you. Works best with the master sword.

Mmm, I think the train has left the station as far as me ever getting good at combat in this game is concerned.
Even after 50+ hours the combat has never clicked with me, like it did with Dark Souls. Doesn't feel like these enemies telegraph their attacks as much, and I can never get the timing of dodges right.
Though I guess the game is also enabling me by never forcing me to get good in order to progress. It's always so easy to just avoid, or cheese, any enemy encounters.

I just used the bombs. Got pretty good at it after a while.
The only time I used actual melee attacks was when fighting Lynel's as I needed items from them for gear upgrades. Lynel drop some good weapons and bows.

Yeah, and you get loads of ancient parts if you do it that way.
I'm a lot less subtle about the way I play BoTW. I can't be doing with all that learning of attack patterns (most of the time; Lynels
demand it of you), so I just charge right in and twat their legs with the Master Sword, then shoot them in the eye when I see them getting ready to fire.

My journey is completed!
Parrying ended up not helping much (because I suck at it). Mainly I wore him down by firing bomb arrows so that they struck him during the brief vulnerability after he unleashed a ranged attack. Luckily I went in there with ~60 bomb arrows.
