I think it's really fun to have burrick this and burrick that. Though, I think it stems mostly from two things:
1. Burricks are a unique animal to the Thief Universe. We don't have any in our world, so it's fun to use them just for the novelty.
2. Burricks seem to be one of the very few actual animal lifeforms that exist in Thief. The only other possibilities seem to be spiders, treebeasts, and will-o-the-wisps. I'm sure some interesting names of pubs and inns could come about from using the others, too, but they just don't have the appeal of the burrick.
(e.g. The Splintered TreeBeast Pub, The Shining Spider Inn, etc. Interesting, but lacking the appeal of a burrick name, just substitute Burrick in those titles - see? Okay, splintered burrick makes little sense, but it has a cool ring to it. :p )
Rowena and Eshaktaar, those look really great! Can't wait to play those someday (hopefully soon?)

I agree with jolynsbass, it's good to use names that refer to beasts or items withing the thief universe. Here's my suggestions:
"The Hanging Taffer" (Say what DOES "Taffer" mean anyway?)
"The Slaughtered Hammer" (Does this Red wine taste salty to you?)
"The Pagans Head" (Don't drink the Cider!)
"The Mechanists Armpit" (Sorry, getting carried away....)
Loved "The Bathing Burrick" THAT'S original!

Even though the line was cut, I still think it's the name of the trickster.

A burrick city would rule! Imagine that. The burricks revolt and take over the city! Bwahahaha!!! Then they fight crime!
Burricks are easily the most important characters in thief. Not Garrett, not Hammerites, but the burricks.

Speaking of burricks: I'm trying to remember the name of the FM I played last month (I played so many in the past few months!). It involved a gas-breathing burrick that was being kept as a pet by a couple staying at the local hotel (where some people were dancing the Macarena in the work-out room). I let the burrick out of the couple's bathroom & it ended up following me all over the town. It actually protected me from some guards when I was robbing the jeweler's store (it unfortunately killed the jeweler, however). Eventually one of the guards killed my poor, misunderstood friend. I cried.
God how I loved that little burrick. *sob*
Thanks for letting me share.
