How do we go about getting the images from the 'family pallete', so that they match how they are used in-game?

You can apply the family palette to the texture in your favorite texture editor. The exact steps are editor specific. Which editor do you use? How do you normally change palettes in it?

Load the full.pcx for the texture family, save the palette from it, and then apply it to the families in the texture, using indexed mode (e.g. replace each colour with the same index in the palette.)
You can also use one of my Bright scripts which converts all the images in a folder to a specific family. It defaults to using a file named "full", too, though you'll need to convert the entire family to .bmp format before it will work.

I always thought that, given the size of those shutters, the handle was too small for anyone's hands. Anyone else think that it is out of proportion to the rest? I'd be OK with leaving it off actually if folk don't think it should be scaled up ...

The handle is a little small, but windows or small doors like that always seem to have annoyingly little parts to grip or use.

I use Gimp for now, although I've downloaded the free Photoshop Essentials and will try it out when I get around to it.
But for all the palette stuff I used the bright scripts that NV referred to. I'll probably just try using them again to get the family palettes.
