I greatly enjoyed the System Shock series and Thief is so often associated with it, so my question is, does any of the Thief series support co-op network play?

Sadly, Thief doesn't support any kind of multiplayer gaming. As far as I recall, there's supposed to be bits of code in the Dark Engine that point to LGS having played around with the idea of Thief LAN/Online at one point, but it never made it into the full game. There is a sort of 'Thief' multiplayer though -
