The better guns use clips that hold more ammo, of course that ammo is rare but they are more powerful and can take out enemies with a single bullet. Conserving ammo is part of survival too though. :) In the airfields you can find military equipment like assault rifles and stuff, there is one airstrip that's pretty accessible along the southern coast.
It's easier to hit zombies if you aim and move backwards, they slow down in front of you. Also they don't run indoors so if you're being chased, run into a barn or something and they will walk slowly instead of running. In cities, i usually climb a ladder, then you can pick them off one by one from the roof as they climb up after you.
You can refill water in the sea, lakes or wells with pumps (Never tried in a city but it's always worked in villages), in the sea you have to go to a certain depth to get the refill option, be careful though, if you go too far and start swimming you might drop your stuff and lose it.
Blood packs are only for healing others, you heal yourself with canned food and meat. Canned food only heals 200 blood though (You start with 12000) so you need to eat a LOT of it. Better to kill an animal and use a hunting knife, cook the meat on a fireplace (you need matches) and you will get cooked meat that heals 800 blood! :)

The in-game voice chat actually comes from the 'mouth' of your character. :)

Okay, so with respect to my ammo predicament, I realized I was missing a huge part of the game which is that the zombies' perception is actually more detailed than I thought. They will spot you from a distance if you're running everywhere, but if you crouch and hold shift to walk they'll ignore you outright unless you do something noisy (like shoot) or come within ten feet or so. Sneaking around towns is actually viable, but if you have to shoot you'll find yourself surrounded very quickly.

Yeah, sneaking is just like playing Thief, also you have icons that tell you how much noise you make and how visible you are. Sneaking on grass is less noisy for example and cover makes you less visible. Mind your breathing as well, if you're out of breath it can be heard quite clearly, at least by other players.
There are crossbows and silenced weapons in the game by the way. Crossbows aren't uncommon but i find them difficult to aim, also bolts can be picked up again after having been fired. :)

I personally find the crossbow to be an incredibly bad weapon, with ammo that takes up far too much inventory space, incredibly poor iron-sights that are in no way representative of what you're actually aiming at, a lengthy reload which is needed after every shot and overall poor damage unless you get a headshot (good luck with that).
I've fallen back on using the 2 weapons that have the most ammo available: the Makarov and the Winchester.
While not suppressed, both are pretty quiet.
Ammo is EVERYWHERE for these guns.
The Mak takes all zeds down with one headshot.
The Winny takes all zeds down with one slug shot.
Ignore the high tech stuff and the military weapons and stick with what's readily available, that's my method of gameplay.
Oh yeah, and get a knife and matches ASAP.
