I felt the same way at first. The full game is much better than the demo, which feels more like a test level than anything.

I didn't play the demo, but I was swimming in ammo for the first two chapters. I wouldn't worry about it. Don't forget to smash the boxes, though.

After a break (I played this for a few hours when I first got it then left it for months) I've restarted with the aim of playing this properly.
I'm playing on Hard and I'm a little frustrated with it. Its a good freak out for sure, and the limb severing mechanic is cool. But it seems badly paced in that the stasis chargers are bunched in one place and ammo is not evenly distributed.
The first time I played I missed a node (didn't know what I was meant to be looking for) but this time I upgraded my Plasma Cutter with both damage and capacity. But the damage seems to make sod all difference - still 3 shots to the leg to sever it and a further 2 to kill. So 5 shots per enemy and I usually, but not always, get 6 shots back as a loot drop.
Is there any point in upgrading the Plasma Cutter? I got this on Steam so I don't have a paper manual for weapons/enemy stats and at the moment I'm kind of floundering about not knowing what to upgrade. I'm also stuck at a point where I just don't have enough ammo to kill the enemies I know are coming because I have no stasis charge and they just run as soon as they appear so I end up wasting a few shots to inaccuracy.
Tips?

This is far more a spiritual sequel to SS2, to me (so far), than BioShock ever was. I really like the weapon/statis/kinesis upgrade mechanic. Its a shame that for everything else there is money, it's a little pedestrian. But since I'm playing on Hard I reckon I'm going to get a raw deal on number of Nodes to be found :(
I tried the Plasma Rifle but sold it as it was rubbish. My plan was to take their legs of with the Plasma Cutter and then take of their heads with the Rifle but this seems to be full of fail. For standard enemies 2 Plasma Cutter shots to each arm (4 shots in total) seems to do the trick. And I'm now messing with the Line Cutter (good for leg cuts) and the Flamer (which seems naff).

No, shooting their heads off doesn't do anything. It's the limbs and nothing but the limbs. Also, you can buy nodes for 10K at the various stores around the levels. I would suggest only two guns so the ammo drops after kills can more specific to the guns you're carrying. I just recently completed this game on medium skill, loved it. Plasma cutter can really take them out as you upgrade the power of it with nodes. I sold it about 3/4 of the way through the game, it became just to powerful with everything maxed. I felt the stasis drops were more rare further in the game and plentiful in the beginning, necromorphs become wicked in later levels and stasis is definitely needed. I eventually used the Line gun as my sole weapon. Dead Space is one of those rare games that I installed and played 'till I actually wore myself out. I'll play this on hard eventually soon.
I found a Peng Statue in the later levels. Not sure what the significance of it was, anyways cashed it in and bought several nodes to get the Level 6 suit. Snazzy! ;)
Edit: I found the Ripper gun to be very effective with an abundance of ammo drops but choose the Line gun.

If you're running short of ammo remember that you can stamp kill, especially true if you have only a few enemies/ left over stasis with a recharger handy. It won't be much use when you're getting swarmed though. Throwing/ shooting explosive stuff can help as well.
Using the right weapon for the right enemy is important. Flamer does get more useful against some enemies you may not have met yet, but it's pretty useless overall, the force gun is overall better against them and more useful against others.
Personally I'd use a full four weapons loadout (line gun, plasma cutter, force gun, assault rifle) rather than two, your mileage may vary.

SubjEff, the basic three weapons you can rely on are the cutter, the assault rifle, and the line gun. The rifle has great stopping power, the line gun's great for the really vicious sods, and the plasma cutter's great for general purpose combat. Ammo drops are still pretty regular on hard; however, as Ladron said, don't waste any shots on their heads - just chop off the limbs.
Unlike Zygo, I prefer the two weapons loadout rule as ammo drops depend specifically on which weapons you have on your person. I find it works out better statistically to have ammo coming for two reliable weapons than having it spread across two reliable and two semi-shitty ones.
@gunny: shame you didn't like it, it's a damn fine survival horror game. It takes its time to build up, but the combat's always interesting. And boy is it ever creepy. The sound design is fantastic, regardless of whatever mothra might have to say about it.
