I recently finished Deperados - Wanted Dead Or Alive (stealth-based real-time tactics not unlike 'Commandos - Behind Enemy Lines', released by Spellbound through Infogrames in 2001) and after uninstalling it, I found the previous owner of the box had kept the disc with the demo of the game. I was curious about why and installed the demo. And what a pleasant surprise, I found the demo consists of a completely new map that is just as good as one from the full game.
Which other demos are worth getting for exclusive content like this?

Half Life I believe. Or was that one of the addons?

Starcraft's demo is also different and fairly interesting. IIRC it was about events happening just before the campaign in the full game so you can learn a bit more about the story that way. I haven't played it for 8 years though so some details might be a bit fuzzy.
And yeah, the original Half-Life's demo was different too and also quite good (and hard).

Yeah, that was Half-Life. The demo's called Uplink.
Fear sort of did this, by putting chunks of different levels together.
I vaguely recall Dark Messiah of Might and Magic doing the same thing, but I'm not that sure.

Nope, it was called HL: Uplink, I believe.
Also, Starcraft and Warcraft 3 both had exclusive content, but the demo levels were all included in Broodwar and Frozen Throne, respectively, so you won't have to download the demos if you've got those.

And of course there's Thief II's "The Unwelcome Guest" demo, which offered a substantially more fleshed-out city section than its final incarnation as "Life of the Party".

The demo for Wing Commander Prophecy had three exclusive levels. A more recent example is Force Unleashed.

The Darwinia demo on steam made me buy the game.
It was a scenario where you had to help them launch a rocket so that they could explore their world. Loved it.

I believe Jedi Outcast did this too. And I remember spending more time on the demo than the full game.
