I bought T3 in the US the day it was released, and it was in the DVD-style box.

The Dark Project, Thief Gold, and Thief The Metal Age all came in a trapazoidal box in the US versions. Later issues came in a jewel case.
Then the Platinum Dual pack came out in a rectangular box with The Dark Project ver. 1.33 and The Metal Age ver. 1.18.
Then in the US Deadly Shadows in a carboard sleeve with a DVD type clamshell.

i just bought T2 in the trapezoidal box. ;) gently used, according to the seller, whatever that means.
i'll probably buy a couple more copies of thief gold and thief 2, in brand-new shape (not caring about packaging), just to have backups.

The most recent copy of thief I bought was in the regular box. They reprinted them after the release of Deadly Shadows, in the original release boxes! It was so funny to read phrases on the box extolling it's advanced features.

I don't know about the UK versions, but the original versions in the US were packaged as follows:
Thief: The Dark Project - Trapezoidal box. CD came in a jewel case with a front insert but no tray card.
Thief Gold - Trapezoidal box. CD came in a cardboard fold-out case (included a CD of Eidos demos).
Thief II: The Metal Age - Trapezoidal box. CD came in a cardboard fold-out case (also with a CD of Eidos demos).
Thief: Deadly Shadows - Fat DVD-style case.
