Santa Claus is a co-opted cultural symbol used to bestow gifts to young people during a winter festival. Picking one of the many historical figures he may have been derived from and showing me an old painting depicting that person as white doesn't really give a basis for Santa being necessarily white. Santa is a just a name. It's like arguing what colour the Easter bunny is.

Much as Christmas itself co-opts the winter solstice festivals practiced by pagan cultures.
For Santa Clause......every origin story for that character( and all the names he goes by in different places) comes out of a European country. Like it or not Christmas is a Euro-centric holiday(ie. It's barely even recognized in Asia) so the mythology surrounding the holiday is probably going to involve Caucasians.
