You could add in elements (ie area of effect things, or weight sensitive surfaces so the non centaur players can step on them but the centaur will need to take a different route etc).
Or you could be a real dick and have the centaur player get transformed into something else, and need to perform a quest line to reclaim his original form.
Possibilities are endless.

Plus he's presumably like 8 feet tall and as wide as..a horse, and incapable of ducking to any great extent, so put the party into a D&D-style cover-based shooter dungeon.
"Quick, everyone! Behind these convenient chest-high walls! Centaur dude..uh, stand there and 'collect' arrows for the party!"
