The last Tomb Raider game was like that for me (Legend). I'm not an old school TR fan but the engine looked cool. It was almost like playing a casual game. TR Anniversary on the other hand was too much work and not enough story to make it worthwhile.
I've been playing Hitman Blood Money which is really cool in some respects but holyfuckingjebus without a walkthrough how would you ever know that there's rat poison in the third drawer from the left in the basement storage room and can be used in the cup of coffee that the secretary will pour herself exactly 7.25 minutes from now? Well, it's obvious isn't it? Use the key card hidden in the clown's briefcase across the street (after you inject his donuts with knock-out serum) to get access to the room with said coffee maker. Don't forget to change into the white outfit - not the white outfit the painter is wearing, but the white outfit of the delivery man who will walk by the main lobby if you pinch your right testicle exactly at the moment the security guard sneezes. I said your RIGHT testicle wormmeat!!! (BLAM! BLAM! BLAM!).
Then again, I guess I'd figure all that out after the 17,000th re-load if I were a patient man.

First impression was bad, but I've grown to like them as I kept playing. He may not be the most likeable character, but at least he's a character.

What about the insane difficulty bump during the city watch portion? Respawning thieves in the warehouse kicked my ass playing on the Easy setting both times I tried to play that POS. Fuck that game.
Easiest game I've ever played had to be Loom. Beat that game one Sunday afternoon, after about four hours of playing.
And Dreamfall was okay (it's no Longest Journey, that's for sure), but WTF was up with adding combat? It gave me bad memories of Jade Empire.
Oh, and Bioshock is a sugary cake-walk on the Easy setting. I dare any seasoned gamer to die once during that journey.

Eh, I dunno. I didn't find that part particularly difficult. Maybe the make-up of my group helped (Khelgar, Qara, Neeshka (I believe) + myself, a dual-wielding Ranger)? Found the Bandit Camp near Fort Locke more difficult, tbh. Still nowhere near difficult enough, though.

Difficulty is beside the point when you're talking about 4 hours of one the most brilliant experiences in adventure gaming history. Now length, on the other hand... I didn't want Loom to end. Ever.

I remember that bit being a bit harder but I'm pretty sure the thieves didn't respawn, there was very much a limited number of them and you had to kill them all. The game really became atrociously easy once you started enchanting your own weapons. You could pretty easily get your fighters (and later the whole party) wielding +3 weapons that dealt 2d6 bonus elemental damage, which pretty much doubles the damage they would otherwise deal. On anyone with a decent attack bonus and number of attacks it gets ridiculous. I played though Mask of the betrayer with a wizard/eldritch knight wielding a greatsword I'd enchanted and it got to the point that, despite being limited to ten levels of high BAB, attacking normally would yield more damage than any non-area of effect spell below level 7.
The most POS thing about the game is the AI and controlling the characters, which has been greatly improved by the recent patches.
Other easy games would be Half life 1 and 2, bioshock and I'm sure a lot of other shooters which are limited to an easy, medium and hard skill. Being a seasoned FPS player, I tend to find the hard skill a touch too easy for a first run-through and once you come to the second or third time around, you're dying for a very hard or a nightmare skill.
Another thing that annoys me is games that have harder difficulties but won't let you play them until you've completed the game once already. Culprits include Max Payne 1 & 2 and Devil May Cry 4. If a game isn't very challenging it can take a lot of the fun out of it, and the first time you play a game is pretty much always going to be the best, so it's a shame to have it spoilt by not being able to select a harder setting. It's also a bitch if you've completed it once already but reinstalled the game, so have to complete it again on easy before getting the harder settings.

Lol yeah. When I finished HL on hard difficulty, I was like "Oh, man, I did it! I rule!". Well, apparently I don't. Whatever.
With Crysis, I did feel like what steo said though. Having tried the demo on all difficulty levels, I started the full game on the hardest (Delta), and didn't find it too hard. It was well balanced, but when I finished it, I really wished there was a ultra hard Echo difficulty or something.
