What the title said. Sometimes there's enemies who just make killing them so much fun you want to do it again.
Case in point (and the one that brought me to starting this thread) are the Cultists in the original Blood. They scream when you shoot them, they scream louder when they die, and they scream IT BURNS IT BURNS when you set them on fire. I smile everytime I light some fucko up and he just runs around screaming. Killing these idiots is what makes the game so much fun. Especially since they're not exactly cannon fodder, either, compared to most basic "grunts".

The duty guy that says "get out of here stalker" in STALKER. Of course it's a major pain cleaning out the whole bar area afterwards, and a reload is inevitable, but still. Just having him in my sights..."get out of here stalker. get out of here stalker. get out of h-" *BLAM*

Seconding the FEAR clones. It's sheer catharsis when you use the shotgun in close range, or throw a grenade and nail it in slo-mo as it sails towards a group of them.
Also, the Pig Cops in Duke. There was this one time, I was just outside the stripper joint being chased by one of them. I was all out of ammo, and he was standing in the doorway, just about to shoot, when the door came down on him and *squish*.
I opened the door again, and what was left of him stuck to the edge of it like a wad of chewed bubblegum. Now that's a messy end!
