Its not much, but The abandoned castle have an AI that turns an the electric light back on. Its crucial to beat the mission.

The lights and weapon ideas are cool, but missing loot would be really hard to work around. Noticing critical loot missing, with the option for the player to leave a fake replica, would work well I think. By critical I mean main objective loot e.g. Bafford's Sceptre type stuff.
Noticing guards missing is something I feel would be best if it didn't cause alert but did make them grumble. I think they actually do this in Thief 3, complaining about the laziness of co-workers.

That would be a great optional objective: "even the dumbest guard will notice it missing; drop by an art forger friend's studio, he's made a passable replica to swap in."
Or build it up with a side objective in an earlier mission: "it was moved to a higher security location and you must visit your art forger friend to make a replica" which you then pick up to swap in.
in Dishonored the guards grumble that "someone should be patrolling this area"

In general AIs sometimes relight a doused gaslight, but

The gaslight reaction will only occur approximately 16% of the time.
:)
My last FM campaign has several enhanced AIs. The priest notices the stolen medallion when he faces the altar again ("Where has that gone to?"), then he tries to find Garrett. Another Hammerit on patrol in the cure office notices when Garrett has switched on the lights and turns it off again. Some AIs react if Garrett blows out the candles, they complain about the darkness and/or walk like being blinded for a while.
