T2X' arrows include the flare and ice arrows mentioned by Azaran, as well as a Confusion arrow (made from earth crystals/moss arrows; the ones R Soul listed above) and a combustion arrow (I think), made from gas arrows/crystals. The latter caused some harmful burning gas to evaproate, I believe.
There also were locust hives. Basically, these were thrown like grenades or flash bombs, but released insects devouring any dead or unconscious being at the spot of impact.
Sterlino's Horns of Canzo also had ice arrows, and an ice bomb, I think. And maybe more. All avaliable in a little shop in-game, very uncommon as well. And then there was that gas mask (also used in Assault on the Gas station) used to travel through areas flooded with poisonous vapours.
Another strange gadget was an electronic mouse or rat which approached enemies and released sleeping gas. Used in Ashen Age pt.1.
Lady Rowena's The Seven Sisters has a few unusual elements concernig gameplay to offer. You have to heal undead people with holy water arrows, you have to protect Basso as he makes his way home from a prison to his beloved (and also undead, at first) Jenivere, and then there's also a little baby burrick which can be rescued - or killed, if you wish to do so, which causes its owner to die from heart failure. There are some other unusual elements in this one, such as an ape which gives you something if you deliver something else to him first. Many of all these features can basically be seen in other missions as well, but they're still not really common.
Yandros' recently released King Abedzen's Tomb has a resurrection sequence, a machine requiring you to insert things in a special order, and above all, Garrett starts a new career as a gravedigger - you have to dig up someone's grave. All three events are not unique, but seldom used in other missions.
In the first mission of King's Story, Garrett has to cut down a tree with his sword. The tree then serves as a bridge over a deep chasm.
A Journey into the Underdark turns the Thief game into a sort of role-playing game. What weapons you have depends on whether you play as a warrior, archer (I think) or mage. Includes some spells, like a few other missions do.
A bit uncommon for Garrett is The Night Before Christmas, where he has to return stolen property to the owners.
In The Dead of Winter, the player is a Mechanist in a mission which plays a lot like the DOOM game by id software.
Better Off Dead does have modified arrows ("Raven arrows"), and if that's not powerful enough, there are also a few cannons which you can fire.
More non-standard arrows can be used in the Darkstone gem missions. These are the Dark arrows used by a Mage sect that recently arrived in the city.
A Brawl in the Tombs exploits the idea of getting your dirty work done by others. Several groups of enemies (undead, thieves and Hammers) can be lured into contact with each other, resulting in a lot of fighting and mayhem. The large number of enemies which you can make to attack each other is what makes this mission almost unique in that regard.

The size and depth of each mission feels a bit uneven, but the ideas seen in each are fun and delightful, and the story has a few nice twists along the way. You get to bust out of prison thanks to a rat (play it to see how), you leave the second mission by flying away in a commandeered aircraft that would make da Vinci nod in approval, then you have some complications along the way, have to build and repair a new Mechanist aircraft on your own, and one of the final missions takes place aboard the Mechanist zeppelin you've been trying to infiltrate and investigate. It's a bit of a hard campaign and I found the second mission (a mansion one) a bit of a slog, with its minor key hunts and local mystery, but I had a very good impression of the campaign when I finished it a few years ago. Sterlino has some definite game design talent.

You also have a huge amount of slowfall potions in the inventory to simulate the usage of a gliding cape, but given that it's just a demo, not everything was given custom item graphics yet. Also has firearm-wielding NPCs (Mechanists with guns reskinned to Gotham policemen).

(http://www.ttlg.com/forums/showthread.php?t=126930) From Beneath the Sands: Whispers in the Desert by nicked - This is one of my favourites among the more exotic-themed or tomb-raiding missions. It's spooky, but also colourful and fun to explore. More importantly, it has some nice mixing up of gameplay, such as a focus on vertical movement and some small-scale platforming, it has climbable sections of wall (clearly differentiated from non-climbable sections) and the epilogue of the FM has you fleeing the tombs in a pretty inspired "outrun the danger to safety" sequence (which gave me a very Indiana Jones or Crash Bandicoot vibe). There are some tricky traps and obstacles in a few places, but this is a textbook fun FM. It's technically a remake of the earlier
From Beneath the Sands, but it's much more polished in every way and is much more interesting gameplay-wise. I'd recommend the older FM only if you're curious, but this remake from 2009 is a must-play.
I also remember that in at least one mission of DrK's
Rocksbourg series, you are supernaturally teleported to a scary location
and then beset by a humanoid monster, until you figure out how to escape that narrow and dangerous space. Subsequently, you're teleported just as inexplicably back to a normal location. This scripted event was one of the worst jump scares I ever had in an FM.
Yandros has already mentioned his experimental gameplay missions. I'd add the two versions of
A Thief's Holiday to
Snowball Fight. Less unusual gameplay, they're basically fetch quests, but nice little FMs for the winter period.

Bathory - 5th mission (Fallen). Enemies explode when killed by your sword, you can cast fireballs. There's also several types of "auras" that you can use (or avoid). Very cool.
