I thought it might be interesting to see what 'quirks' of the dark engine people found amusing, so . . .
I always got a kick out of the ability of a guard to appear half-way through a door when they were searching for you, especially if you stand in a way to block the door from opening . . . I've found sometimes when they're sticking through the door, you can manage a knockout (doesn't always work, though)
The other one that I could never figure out, is the 'reverse-gravity rope' . . . you jump to grab a rope, and when it's in a tight spot to grab, you fall back from it . . . sometimes, the in-game 'gravity' goes reversed, and you're slung straight upwards, which ends up killing you

definitely NOT the cracks of death. those things always scared the crap out of me because everything would be all tense and quiet and suddenly Garrett would scream and die.
i'd say standing on a table or ledge or something right in front of a guard so that he thinks he can't get to you and watching him taunt and wave his sword at you was the best quirk

Maybe elevatoring ... use two objects that "hover" on top of things when you drop them (like keys or apples), that you can also stand on, so you can drop one, jump on it, drop the next one above it, jump again, pick up the bottom one from under it and drop it on top, and up you go. You can climb them like the rungs of a ladder, anywhere, as high as you want to go. (Anyway, it's something like that. Experiment with it and you'll figure it out.)

I loved how you could (for example in Assassins) escape the guards by jumping in a well or a fountain with very shallow water while the guards, obviously having a severe hydrophobia could merely shake their fists and taunt at you from afar. ;)

Polygon limits, especially in Thief1. It encourages designers to use cramped and meandering spaces, which is actually very appropriate for a stealth game set in a city of crooked alleyways.
In Return to the Cathedral, [SPOILER]being able to block the entry doors with a bone or something, and escaping without tackling the cloister area.[/SPOILER]

being able to run up near-vertical slopes as long at the corner of two slopes.
Also lots of fun with mantling. I discovered something new the other day. I always thought you couldn't mantle into spaces where Garrett couldn't stand up, but if you crouch down, then mantle into a narrow space, Garrett will kind of bounce-mantle and crouch into the new space.

Also, I enjoy kangaroo-jumping in Thief1, even if it is an illegitimate exploit. One time, I somehow managed to get killed by running against a wall in The Haunted Cathedral (near the hiding place of serpentile torc), but couldn't replicate the feat later.
