Red Alert 2 - The heavy metal / military style music in this game kicks fucking ass.

Metal Gear Solid 2: The start menu music - I absolutely love the menu music for this game. I often would start the game up then end up sitting back for a few minutes listening to the that music.

MGS3 has the best tension music ever. Someone found a body and I spent a few tense moments waiting for them to stop looking for me, and the music was perfect.

Mostly anything Harry Gregson-Williams does is top notch.
He does a lot of stuff that isn't military thriller type Soundtracks too. I guess he helps Pixar out with a lot of their stuff.

Fun fact: he only did about half the music for the game. The rest of it, including (

Off the top of my head. Many (but not all) are in my general music playlist:
* A lot of the sountrack from Deus Ex, mostly the 'exploration' music rather than the 'combat' must (Ocean Labs is an exception).
* Deus Ex: IW title music (Trier isn't bad either).
* Gothic 2 - "old world"
* Daggerfall (especially the snowy or heroic tracks - I miss game music with actual songs)
* Drakan: Order of the Flame
* Anachronox had some nice tunes, especially Tensil Theme
* Betrayal at Krondor (though I haven't listened to it lately)
* Lemmings (cheesy but catchy)
* Main menu music for Civilization 4
* Blizzard RTS music, Starcraft, Warcraft 3
* Also seem to have that Portal song stuck in my head lately
I generally like the music of any game that I enjoyed playing to some extent, because the music reminds me of the fun I had playing the game - and listening to it often makes me want to replay the game.
Edit: As ZB said, Vampire: Bloodlines has some nice music, but I don't think it's really something I'd listen to outside the game.
