If not then I'd vote for Chicajo's "Shock the System", which is basically my favourite game of all time distilled into a single song. Hard to go past that :)

Time's Scar (although it's only the first thirty seconds) or Dream of the Shore Bordering Another World from Chrono Cross. The intro to Time's Scar has literally made me cry, more than once.

There are a good bunch I like. But one that holds a special place in my heart (for personal reasons) is the Home Theme from Beyond Good And Evil (the one that plays during endgame credits).

Koji Kondo writes terrific music, but it's tough to choose a single piece he wrote. Anything from Ocarina of Time or Super Mario Bros.
Also, Katamari Damacy. The whole soundtrack is worth buying, and the main theme, Katamari on the Rocks, is one of my favourite songs, video games or otherwise. I'd like to hear it played at an outdoor festival through a towering PA.

It changes with the times and the moods. Currently the MGS3 theme (only avaible on the soundtrack in completed form - split into 4 parts in the game) is fantastic dance music....but outside of specific circumstances, there is just a ton I think are fantastic, from well-known ones (the Halo theme) to more indie stuff (Faces of a Fashion, though technically it was made before Darwinia). The one I think of as my 'theme song', however, is 'Under Cover of Night' from Halo.

Predictably, I could name any one of a dozen pieces by Nobuo Uematsu, especially when they're performed by a real orchestra. And many tracks from System Shock, UnderWorld II and several others that escape me.
But
today I'm opting for Cid's Theme from FFVII. Despite having a droopy rocket, Cid is the epitome of cool.

But isn't it true that the soundtracks we like most are those that we attach to fond memories of the game itself, because it touched us in some way? If, for example, the theme to Alice was the soundtrack to some hypothetical third-rate Diablo clone I might have had the misfortune to play, I doubt I'd have such enthusiasm for it.

One of the tunes off Broken Sword - Shadow of the Templars. Strangely enough, I would also have to agree with Ulukai about some of the tunes off the Underworld games. This is too hard...
