Some of the best music from a game i've ever heard has to be the Grim Fandango soundtrack. Cool jazz FTW
Also, Chrono Trigger soundtrack is awesome, but you guys gotta check this out if you haven't already. Brilliant work from OverClocked yet again.

Shenhua theme w/ Vocals from Shenmue.
The whole Shenmue soundtrack one of only a very few that I'll listen to when not playing the game.
Silent Hill has a few suitably creepy tracks, but only one or two of the stand up on their own for me.

My first thought was the theme from Deus Ex but since I guess I love this theme in big part because Deus Ex is my favorite game, I'll say instead the Intro from Skate or Die on the C64. Several times I loaded this game (that I didn't like) only to ear the intro.

Pretty much any of the pieces from Shadow of the Colossus. I haven't played the game yet but I've listened to the music a dozen times.
The opening theme to Fable isn't bad either. Woot Danny Elfman!

What about the piece of game music that isn't your favorite (necessarily), but that you just
can't get out of your head; it just sticks there and replays itself on an endless loop.
For me, this dubious award would have to go to Grieg's "In the Halls of the Mountain King" as played on the old C64 game Doriath ((

Probably because in the game it really did replay itself on an endless loop, so you'd listen to the same 1:30 track over and over for hours.
The music tracks on Civilization (1, 2, and 3) are another example of this, since you really would play it for hours at a time with the same few tracks looping. Some of those tunes are really etched into my memory, so when I hear them they have a sound of inevitability almost; the tribal drumming track and that African-guitar tune in particular.

I'm in shock that no one has mentioned the Tristram theme from the first Diablo game. Not only is it good, it goes on for days. The sky outside gets a little bit darker whenever I play it.
EDIT: Someone has mentioned it, but I didn't find it in the initial search, because it is spelled "Tristam." In which case I submit also the Transylvania theme from the NES Ducktales.

All of Disgaea's music is excellent as well, most of my favorite tunes can be heard in this AWESOME disgaea 2 trailer. The piece where Laharl raises from his coffin is my favourite.
