I assume zombies in Thief:DS work that same as the earlier games in terms of health. They have X hitpoints which can be reduced normally via regular methods of causing damage. If they reach 0 hitpoints they will collapse, however, if you get too close to a downed zombies they get back up with their hitpoints replenished.
Special damage done to them will reduce X permanently though - damage done using fire, magic or holy water counts as special damage. NPC humans seem to be a special case - they can damage a zombie and even kill them.
A zombie shot in the midsection with a fire arrow will be torn to pieces and be gone for good. When they are killed by an NPC they will be torn to pieces as well.
In short, forget hand to hand combat. It's intended to be a last resort for Garrett.
