Maybe Deadly Rooms of Death, a playable version of which is shareware, along with a thousand or so fan levels (also like Knytt Stories, btw).
Some Drod levels are more difficult than others, but especially if you stick to some of the easier levels, on the whole it lets you just sit back and figure out how to clear a room at your own pace.

Since you mentioned 7th Guest have you played its sequel "The 11th Hour"? Excellent game. Personally I`m more of a fan of the first game, but of the people I know who have actually played the two games, most prefer the 2nd game.
Other than that I`d recommend on the adventure side of things "Full Throttle" as its definately one of my favorite adventure style games of all time.

A bit of a necro:
Beyond Good and Evil was really good, and a sequel is coming! I'm excited.
I've messed around a tiny bit with the leisure suit Larry Games, but the primary "relaxing" game I've been playing lately has been World of Goo. So fun, pretty and it actually has a lot of atmosphere and story.
Still need to get a PS2 :)

Oh I forgot about my all-time favourite late-night game: Hexic HD. And no, the microsoft online version does not count. For some reason they decided to make the Xbox version the ambient version, with a wonderfully dark and evocative (
http://hexicmusics.wordpress.com/) electronic soundtrack, and perfectly matched sound effects. Also there's the fact that in the main mode—unless you have a bomb—there's no time pressure. So when you're exhausted you can just sit back and enjoy the atmosphere.

Rez by Sega Amusement Vision is fucking great. Especially the Rez HD enhanced port for XBLA.

Rez for Dreamcast was pretty neat 10 years ago as well.
The HD port is basically the one reason (ok, that and Forza 2) why I've been debating getting a used 360. I wish Sega would just port it to PC and throw it on Steam.
