Console-only games don't count. :(
This. :(
And of course I say that because I didn't have a console to play it on. But I did try to watch a Let's Play on Youtube last year and I turned it off 5 minutes in with sheer terror at the horrible new voice cast they got. Fact or sour grapes, who knows...

Star Control, damn it! But I know they'd just fuck it up by making it grimdark and changing the top down battles to something stupid like 3rd person behind-the-ship flying.

Command & Conquer. After EA dragged it through mud, it could use a fresh start (this time with much better planning story-wise).

I'd like to see a game in the Ultima vein, mainly because it's been ages since we've seen a party-based open-world RPG of that sort. Most role-playing games are either party-based (Dragon Age) or open-world (The Elder Scrolls), but you don't really get the combination any more.

The closest I can think of to a modern Ultima is Mount & Blade. But it's not a true party, you just have your own band of warriors; so it'd be cool if you could have your own party in it. But they did that trick with scale I was interested in, wandering the map you're a glorified icon so the world really seems world-sized, then you can go into cities and encounters FPS style.
Maybe I didn't play enough M&B though to notice, though, but I thought they didn't take advantage of that to make a really massive open world you wanted to explore, with very different cities and regions and quests, like I remember from Ultima. But if they brought some more of that in, I think a tweaked Mount & Blade model would be a good place for an Ultima reboot.

Probably not "of that sort", as it's not fantasy, but Fallout: New Vegas. Open-worth, first-person, you can choose to go solo or have a party of up to three.

The two Ultima TCs for Dungeon Siege are pretty impressive, but they're hampered by the engine, which is ideal in some ways and requires jury-rigging in others. Getting a polished modern Ultima would be great. I'm a bit torn, though; I'd love to explore a 3D, first-person Britannia that feels big and inhabited, but I'm not sure you could pull off the party-based thing well with that sort of view.

My list? Nothing. There's several franchises which I'd like to see
retired though.
Resident Evil "6" will be a reboot of some form. Whether it's just gameplay or canon as well remains to be seen.
Also a new C&C unrelated to the Tiberian saga is in the works. The head of the new studio working on it is the creator of Heroes of Might & Magic.

Both Earthsiege and Mechwarrior are pretty high on my list - because not only could they benefit hugely from a tighter, contemporary take on the action-sim, but (more pragmatically) they could actually be financially succesful.
Of course, a Mechwarrior reboot IS being made, and has a lot of potential.
Forget about Mechwarrior, it's in development hell because Harmony Gold is suing them for using Macross rip off mechs again.
What's the point anyway? The end result would highly likely be some stupid action game for console audiences. MORE LIKE MECH ASSAULT 3!!!!!!111
