I agree with your assessment on flight sims, and it's really frustrating that I don't get into them when I love proper racing sims and space sims so much. I think a big part of it is the subject matter, as Mig Alley clicked for me in a big way while IL-2 and Lock-On were both duds. I think it's a matter of prop planes = fail, missile warfare = fail, gun combat + jets = huge win.

Just about every sandbox game really. Had some fun with the Imfamous demo but it isn't for me.

Baldur's Gate- it just feels so low-tech compared to BG2, in almost every way.
Ocarina of Time- dull, dull, dull. Tried playing it three times, and I quit earlier every time. LttP was awesome, though.

Galactic Civilizations I and II -- In theory, I should be all about these games. I've missed the 4X genre and can sink way too much time into Civilization games. Yet both of these just feel so... bland. I don't want to get involved in that universe. I don't care about any of the species. I don't think I know any of the species. Maybe that changes with the update that gives each race their own tech tree, but I haven't tried it since then.
Story is paramount for me. I can still lose myself in Sid Meier's Alpha Centauri, which has many more gameplay flaws--but the factions are so lovely and the story so understated, complex, and shapeable.

The Neverwinter Nights franchise comes to mind. Given my taste I should have loved these games, but I didn't.
In general, neither MMOs nor the sports genre do anything for me. RTS games are hit or miss, as are sandbox games.
Lately it seems that once I get past that new game phase I seem to lose interest. I used to finish any title I'd purchased, now I've got a stack I haven't put more than an hour or two into.

GTA4 is a good one. I used to like the GTA series; now I just don't give a fuck.
Fatal Frame. I spent years trying to get a hold of the first one, but when I actually played it? zzzz. Will have to try it again, though.
Fallout 2. Big bag of boring unbalanced suck. Going to give it another go, though- I think if I can just fucking get a real gun and not this pipe gun bullshit I might actually get somewhere.
Silent Hill 4. Fucking annoying gameplay and when they make you do it over again with Kurt Cobain chasing after you with an Uzi I said "fuck this game" and turned it off.
Killing Floor 2.0. Loved the original but when 2.0 came out I was hugely disappointed. The atmosphere of the original was gone and the gameplay was severely gimped. Alex Quick's attitude towards people who didn't like it (namely, "YOU DON'T MAKE MODS YOU'RE A HAMFAG YOU DON'T KNOW WHAT YOU'RE TALKING ABOUT SUCK MY DIIIIIIIICK") didn't improve my opinion of the game any. That KF is now a commercial game you can buy on Steam is a fucking crime. That asshole shouldn't get any money for his shitty game and his shitty attitude, he should instead get buried alive in a septic tank.
Planescape: Torment. I want to like it. I want to love it. I really do. But that fucking Infinity engine is the fucking worst thing on the planet. I will not play any game that uses it. PS:T really, really fucking deserves a remake.
Portal. Though to be fair, I bought OB on day 1 and played Portal pretty much right after Episode 2, so I got to play it before it turned into a meme. It was an okay game! But that's it. It was just "okay"- it didn't change my life. But I am still hearing assholes singing that goddamn song 18 months after the fact. Fuck Portal.
Clive Barker's Undying: Doom 3 syndrome long before Doom 3 was even out. Linear as fuck and generally boring, especially towards the end. The linearity's what killed it for me, though. You have a big fucking mansion and yet you can only go where the game funnels you? Fuck that.

Neverwinter Nights in Single Player Campaign. I was expecting Baldur's Gate on steroids, I got some bullshit about Lady Aribeth and her wildlife problem. MP was awesomes, though.
X3 - A sprawling universe of huge depth and things to do, apparently. Unfortunately, when they got around to patching it so you could get more than 10fps I thought it was a massive universe of fail.
Diablo II - Let's face it, it was never going to be about the back story. But it just didn't have the atmosphere of the first game.
Half-Life 2 - Nice to look at, story was ok, I just never found it particularly spectacular or gripping. Let's not talk about the 'ending'.
Any Sims Game or Expansion - Maintaining any degree of control over any more than 2 Sims quickly becomes an exercise in patience as they crap on the carpet and jump and down with glee at your new wallpaper selections. It's sold millions to turd burglars who don't know any better.
Thief II - Garrett's back! After playing the first mission, I realised I didn't care.

Hmm, I absolutely loved Half-Life 2, but IMO the episodes are rather weak, especially the second, yet most people say it's the best, and that it's an improvement. I don't know, it just didn't work for me. I'm only interested in the third one because I'm curious where the story will go.
