The series werent the same in G3 either, i'll never forgive PB for that despite that i love Gothic1-2. It's their own fault that the series went to hell, they spent too much time trying to make an Oblivion rip-off and ended up with a terrible flawed game, they didn't give a shit about their fans, they fucked up because they became greedy.
There are a few games that i find myself going back to;
WaveRace 64 (incredible feel and control in this game, i just LOVE this game.)
Donkey Kong Country 1-3. Everything is just beautifuly crafted; the music, the graphics, the gameplay.
Mario 64. Playing it on DS now, it's such a great game.
Mariokart. Also playing this on DS, and it still delivers.
Galactic Civilization 2 with expansions
STALKER. One of the best games ever created, best atmosphere ever.

Yeah, that was implied, but I should have just come out and said 'post-Gothic 2, it changed too much for the worse, and will only get worse with the 4th game'.

Fucking Baldur's Gate. I've resisted installing on my new machine but it's only a matter of time.
Also Neverwinter Nights, even though it's the inferior game. I thought I escaped it years ago, but suddenly I'm playing it exclusively again. Character creation is fun, though, and by now most of the good mods have come out. There are some spectacular ones out there.

Half-Life (1), for sure. I'm still downloading single-player maps for it, and every now and then I go back and revisit older mods that I've mostly forgotten.

Well, Alpha Centauri stands head and shoulders above all the games in my collection; it's been installed on every computer I've owned since 1999.
Also, High Heat 2003 gets a seasonal play every year. I've never found a better b-ball game for the PC.
And yeah, the holy trinity of TTLG worship (System Shock, Thief, Deus Ex) have been played to death in my household.
And then there's Ultima V, my favorite RPG of all time. It get's played off and on every year.
