Is Garret's actual age ever stated in any of the games? In the first game he looks a bit old
[SPOILER]namely in the eye-ripout scene. You can see his lower half of the head and to me, he looks rather old.[/SPOILER]
But in DS he seems a bit younger.
He ought to be young because he's so nimble, and in the start of TDP (after tutorial) it seems like he's just grown up.
Any answers?

I don't think an official age for Garrett was ever decided. Afetr Thief 2's release, Gamespy did an 'interview' with Garrett (with Gamespy writing the questions, and Terri Brosius writing Garrett's answers of course). When asked about his age, Garrett/Terri replied -
"Garrett: I don't remember my parents at all and I don't know how old I was when I began my training with the Keepers. I guess I never think about my age."
That said though, by the end of T3, I always thought of Garrett as being in his early 30s.

Trying to cleanly match up DS with DP and TMA just causes headaches. Ask the "Mapping the City" gang about that.
Except for the cases where one briefing directly refers to the previous mission, it's hard to tell how much time passes, especially in DP. I like to think that considerable time passes between Garrett leaving the Keepers and the Bafford mission since he talks about "another fat nobleman's priceless trinket" (assuming that 'another' modifies trinket and not nobleman) and he already knows Cutty.

In TDS, time seems to run amok; Ion Storm should really have noticed this better. The gaps between each mission are called 'days', so according to this the entire story of thief 3 takes place in about a week! Seems a bit unrealistic, to tell the truth.
Also, this begs the question; how long is the gap between TDP and TMA? I've got no idea but it's probably on one of the packages somewhere, or on a TMA webpage. There seems to be a definite gap between "A Keeper's Training' and Bafford's. Whether this is many or just a couple of years remains to be seen.

Seriously though, this topic is a dead horse waiting to dissolve. I think there was a treatise on the theoretical age of G. some years back, a schoolwork or so.

I don't see any problem in coming up with an age for Garrett yourself. In TDP I always figured he was around 25, since as Spix said, he had to be young enough to look like a convincing Hammerite novice. Also, I noticed that in the cutscenes his hair looks like it's either shaven completely off, or shorn very close to his scalp. . as if he recently left the keepers who seem to have a practice of keeping their scalps shorn, at least for most of the members. (Kind of like a monk's tonsure, but I digress)
In TMA I figured he was about 27 and in DS he's around 35.
To me he still has to be young enough to be nimble and strong in order to keep thieving. In the Thief world where it's seemingly the middle ages, I would assume life expectancy to be considerably shorter, where men probably lived to be about 45, and Garrett's got a particularly stressful occupation, what with getting chased by guards, shot with arrows, dodging zombies, having to save the world at least three times, etc. .
Yet, it's always his voice that makes me want to lean towards the older age assumption. . he has a very physically mature voice.. . .but myself, I look much older than my age to a lot of people, my own voice is pretty deep and ever since I was little, I felt like I was about 45. . . so something like your voice isn't always a good age determiner and in Garrett's case, a life of poverty and hardship can definitely age someone prematurely.

That link was marvelous reading.
The various analysis given were very well done. I had always assumed Garret to be in his mid 20's and 30's as well, and I see I am not the only one. This site seems to have some buried treasures I have yet to unearth...
