That's because they are stepping in Morse-code. If someone steps wrong, he doesn't know the code, so obviously he is a thief.

I was thinking they had seismic sensors in their shoes because guards seem to "hear" Garrett even when his tap-crouching didn't make any sound.

Ability to curse the guards so they can't climb the table while he is on it
When his light gem is fully dark the enemies doesn't seem him even if they are just in front of him and are looking at him
