I agree. Actually i think Thief3 is the best of them, the suspense and horror is just right + the level design is miles ahead of the previous games.
The Thief games ARE horror games, but it's not ONLY that. I dont think blood has that much to do with horror, i dont find blood very scary. I wouldnt want to see a Thief splatter game like Postal, that would just be premature.
What i'd like to see is a Thief game with the Unreal3 engine since it can handle large areas without loading, a large open world like GTA where you decide what missions to do and who to work for.

Thief already has one of the most mature/adult fanbases around. I think you confuse content that would appeal to adult gamers w/gore. Besides, gore has/had been done to 'death' (:D ) and the approach Thief took was fresh.

It would not be Thief with blood, gore, and sacrifices. You want people being sacrificed and real horror, check out the Fatal Frame series. Some of the best games ever;)
Thief is great the way it is. Yes, it has creepy moments (dare I mention Shalebridge?), but it's not supposed to be horror. It's stealth.

Then of course, this is further compounded when people who loved TDS confuse a sincere love and appreciation of the series, with hatred. I'm a huge fan of the series and I was extremely upset with what they did with TDS. I know it's an 'ok' game and better than a vast majority of the 'current' games out there...but that's hardly a consolation when the previous games were so much better...it's hard to go back to grits when you've been eating caviar. I realize it's a bit hard nosed to be so tough on TDS, but it's equally obtuse to start slinging insults at fans who have been with the series from the beginning and felt betrayed after Ion Storm promised the moon and instead gave us processed cheese. No, gore is only a complement to horror. I think they could have used it a bit less disregard, even taking the risk of loosing some fans. The ones less interested in dark themes, wanting pure gaming diversion. Look at some movies, for exampli, like "Saw II". its definetly pretty gory, but everyone who did see it rates it as one of the best horrofic movies around. And the plot is even despised, as the intensity of images stuns the majority of people... I guess one can hardly forget the first scene... :)
I do think theif lost some of its precious elements during the transiton from the second to the third. Women, for example. There arent any of them in Deadly Shadows! We got to have women, my friends!.. otherwise the whole plot seems senseless and uninteresting... made for acholytes in a sect who not even the vision of a dazzling female is allowed...
Where's an example how 5 minutes of thief could have been... a whole more intense, carved in memory forever...
He (Garrett, our memorable hero) looks at a door, and a smile reaches his face. Strong wood, embellished with hours of pacience and talent. It was closed. He gently pushs it, allowing a dense yet weak light to enlight his tired face... he enters such space, immediatly sensing the fragrance of wine... he smells and instantly seeks its origin. In a far side of the room, lyed, helpless in a confortable armchair was a young woman. She was wearing a dress, apparently white, with render adorning its limits... a collar of silver rested on her naked chest... her head was curved behind, in a position of exaustion and fatigue, illuminated by the beans of a Moon which penetrated with such unrepite the refuge of a Lord's daughter. She was sleeping. He approachs her... immediatly noticing her milky tights, fragilly left on an uncatious stance... bared and sweet...
...on her lap was lying a book... red on the cover, opened at its beginning. Lines of licentiousness content could be percepted... probably stolen from the depths of her dads forbidden library... on a table near the couch rested a letter, wet with tears of hope and lasting love, mentioning an encounter so looked for, yet so feared... written 1 hour ago, on delirious and unrestrained moments. There was also the bottle of wine... red wine, standing unlid, exhalating its intense scent. A chalice... a gold one, dropped down on her silky, once regarded with obssessive care, napron, was splatting near cloths with red liquid... resembling the blood she had lost the night before..
...he is standing 2 feet near her, hearing her compassed rithm of breath. She suddenly, in the middle of such absort gaze, starts opening her beautiful, dark eyes... gently, as waking up from an angels sleep... to a world too hollow to be seen. She notices him... everything was too rapid for even a slight reaction... she sees him, a figure in dark, like a Diana's minion, ready to her deserved punishment... she stares, in absolute terror, incapable of letting a word espace from a once candid mouth... her color, fading away in seconds, the prelude to a faint, craved with the daring of the past condition, now obliviated, only remembered on her oniric path..........

Actually real horror comes from your imagination, while gore is only for people who are visually challenged, so that they can not visualize what WOULD happen if they can not see it. That's the difference between a zombie movie and Hitchcock.
