This thread prompted me to dig my dusty copy of Unreal Tournament out of the attic, and give it a blast.
Unfortunately, some fucker (me) hadn't put the CD back in the retail box, so I ended up going through everything and eventually found it in a photo album. God damn.
Happily, it runs great on Windows 7, and it's still as fun as ever online.
Also found my Quake CD, although I guess I'm going to need some sort of VM for that.

VM for Quake? GL Quake should still work fine on just about any version of Windows. If you want something more modern, there are a ton of source ports by now.
However, if you're just talking about the install, you're right, you may need to use Dosbox or something to get it on your hard drive. I haven't done a proper install of Quake in years; I just copy the directory structure around.

You should be fine.
1. Install the newest official patch (436).
2. Install the newest (
http://www.utpg.org/) unofficial patch (451b. 100% backward compatible with 436 servers).
3. Install the (
http://www.oldunreal.com/utpatches.html) Oldunreal Multimedia Patch v0.2.
4. Install the latest (
http://www.cwdohnal.com/utglr/) enhanced OpenGL renderer OR (

5. Lastly install the bonus packs #1-4.

When I used to play TFc before Steam, I used a custom knife model as the spy. I played spy a majority of the time, and the katana I downloaded looked much cooler than the default knife. This had no change on actual game play though. It just looked awesome when I snuck up on unsuspecting snipers.
