I can't seem to move silently, I'm usually crouched and walking and then I hit shift to move slowly but even then they seem to hear me. What I noticed though is that you can sort of measure when your steps touch the ground so you can, I guess keep hiting and releasing the shift key while walking. But am I doing it right? Also what's the slide key for? mapped with Unreal settings on Z.

The slide key just makes you strafe instead of turn.
Creeping is not completely silent, it's just more silent than walking or running. The sound you make is directly proportional to how fast you are moving, not in what style you are moving - so crouching and creeping is more silent than standing up and creeping, moving while carrying a body is more silent than moving without carrying a body, and so on. And of course it depends on what material you're walking on - it's very, very hard to move across tile or metal without being heard by nearby guards, even when crouching and creeping.
Also, what AIs hear does not correspond to the actual pace of your footsteps - you can be heard by a guard even when your movement did not produce an audible footstep sound.

In DP/Gold there's only one way to move completely silent. Press shift. Press 'forward' key for a short time and release it after Garret moves a little but before he makes a loud step. Then press it for a short time again.
Try to walk this way in training mission on the metal surface - you'll learn quickly ;)

Again, it's not really a matter of what sounds the player actually hears from their footsteps, but of how fast and for how long they move. Inching your way forward in this way does work well, but you can still 'make a sound' and get caught this way before hearing a single actual footstep from yourself - which can seem quite unfair. But as long as you move in very short taps you should be safe.

I see, also what is mantle? I keep seeing it on FAQs but I never saw that on the tutorial or in the key bindings.

Go up to a wall with a ledge on top, and hold down the jump button. You'll grab onto the ledge and pull yourself up: this is called mantling. It only works when the ledge is wide enough and within reach, though; otherwise you'll just jump. You can also mantle onto large objects.

Isn't that the same as climbing?
One complaint though, the game can be a reall pain in the ass when moving, specially if there's this little ledge that is to low to climb and to high to jump over without gaining balance.

Technically no; climbing is what you do on ladders, and it's controlled differently. Mantling specifically refers to pulling yourself up onto something.

While on the topics of movements.... I'm right now in the middle of Thief 2. The thing that aggravates me the most is getting off a ladder either at the top or the bottom. Maybe I'm just uncoordinated or something but sometimes I just have a hell of a time getting off at the top when I have to go either left or right. The only way I've figured out how to do this hit the jump button. But more often than not that just ends up making me free falling back to where I climbed up from.. After a few attempts I can finally make it but it's frustrating. As far as getting off at the bottom which is easier but I have to also hit the jump button and that can often cause a bit of noise when landing which sometimes isn't something you want to do.... Anyway I'm thinking that I'm just missing something and not doing any of this correctly....

Try facing DOWN the ladder and keep the W pressed. Some of the ladders do seem to hang you up, but in most cases, when you get to the bottom backup a rung or two and just W down.
Another trick is to hit crouch as you jump. This can soften your landing.
Also check that you do not have the AUTO checked for ladders.
At the top just keep a smooth upward motion going. The ones where the ladder sticks above the level you are climbing to can be tricky, but just walk right over the top.
