It's one of my favourite RPGs exactly because it doesn't make everything easy for the player. It's mostly linear, but the world is almost completely open from the beginning. It's such a breath of fresh air when compared to the likes of Morrowind or Oblivion, where everything is conveniently weak when you're low-level, or games like NWN2, which are just extremely linear so that you can't really go anywhere where the enemies are too tough for your level.
Definitely play Gothic 1 first, though.

Which is good. Too easy would get boring. I'm just not that used to RPGs, but I don't think that'll be too much of a problem (at least I hope it won't).

OK, does anyone have an explanation for how damage is determined in this game? Damage from the same weapon seems to always either be very low or very high.

It won't get anywhere near boring to you, provided you like the game. In fact, it'll probably make you feel bad about yourself starting off, considering you start out as a weeping weak wimp, and the NPCs treat you as such near the beginning of the game. Specially in Gothic 1, where you have to get beat up and called a few mean names until you start getting some respect.
And a word of advice. The control system is every bit as funky as people make it out to be starting out. It's not impossible to use, it's actually quite nice once you get the hang of it, but it'll feel weird until you do. The funny thing is, it's actually a perfect fit for a gamepad, and easier to come to terms with when you're using something like a 360 pad. I'd recommend getting Pinnacle Profiler or Joy2Key and mapping the keys if you've got a good gamepad lying around.

The damage done is based on the weapon damage, minus the enemy's armour. Occasionally, you'll do a critical hit (how often this happens depends on your weapon skill) which will add your strength as a damage bonus.
I'm not 100% sure about this, but that's how it was described in Risen, and it seems to fit with my observations of how Gothic 1 & 2 worked, so it probably applies to all three games.

No gamepad, and I'm not planning on buying one either; I much prefer mouse and keyboard over thumbsticks, which I never can quite get too good with (mostly because I don't often play on consoles). But at least I know now to expect it, so thanks.

Compared to SS1, the controls are easy! ;)
And perfectly usable on a keyboard and mouse.

Don't get me wrong, it plays fine with the old kb/m. I played both Gothic 1 & 2 fine using it, but I wanted to lean back and play NotR. So I mapped the mouse and keys to my 360 pad to see how it worked out.
The results kinda surprised me. The whole control scheme gelled perfectly with a gamepad, and I actually ended up being able to dance around in combat a little faster I could with the kb/m. Other peoples results may vary, but hell...I liked it.

I've seen it said multiple times that Gothic was designed firstly for a console and that is why its controls seem to fit a controller so well. No idea whether those rumours are actually true though.
