Yeah it would also kill immersion. I'd be perfectly happy with Tomb Raider Underworld level of graphics. They don't need to do anything special except in regards to defining areas of shadow.

Given that Thief is mostly done in pitch darkness then Art Design is probably way more significant than graphics technology. It's all shapes and silhouettes. Sound too for sure, like Coffee says. That said, animation is something I'd like to see done better. I didn't ever get around to trying Assassins Creed (and don't want to thank you Eidos Montreal, I saw you looking and thinking 'coo, we could do that...') but the character animations and the cloth and all that looked pretty cool via youtube. It'd be great if animation could be nailed sufficiently so that there was believable movement and detail in the characters up close. Curtains blowing about in open windows would be nice too.
I don't know why, maybe a bad case of uncanny valley, maybe something entirely other, ~ god knows something was wrong ~ but the animation in Deadly Shadows never really did it for me, even though I thought the guards walk and a kinda kooky marching step that I liked. Except the puppets - they were awesome. Never want to see them again though.

Crysis was a fantastic game. I lost count of how many times i replayed it using different suit stratagies. It almost had the replayability of thief because it was a totally different game depending on what functions you used.
Which is one of the things I hope they keep for thief. Multiple ways of completing each level. The 2nd mission of TMA is the kind of example I mean.

Agree very much on this.
I also agree that art style will be a lot more important than choice of engine. The Tomb Raider engine will be more than up to it, but it's important that you avoid the generic look of the assets in Tomb Raider and go for something akin to the above images color-wise.
The defining quality of Thief graphics is the contrast between deep shadows and high-saturation colors. The cut-scene look of Thief: DS should be a rich source of inspiration.

I don't care about the graphics. Really. I know it'll be at least decent (like nowadays graphics at worst probably) and that should be good enough for anyone, that hasn't got some strange problems about it.
Cutscenes? Filmed, like in Thief I and II of course. :D
I think 2004 graphics would be prime, if they smooth the physics, make beautiful art and shortly saying - make the ultimate successor of all 3 games. :D
