Using Darkloader to play the Gift T2FM...when I go to play it and click on new game it's loading Running Interference even though the menu is clearly the Gift.

It sounds like you may need to clean up your files. This is a typical problem if you do not install the original thief game between installing a new Fan Mission. There is a work around that you should find in the help sections of this forum. The post above by NickD has instructions.

What you are looking for on the page that bedwine linked to is this:
Clean up of files
Occasionally you will find that you'll start a new mission and run into problems. For instance, you might load one mission and when you start to play you'll see something that indicates you're going to be playing a mission other than the one you selected or you might experience crashes.
Sometimes DarkLoader or GarrettLoader fails to clean up the Thief folder while uninstalling an FM, so you might have to do it manually:
Install the original game missions and delete any remains of the following folders in your main Thief folder:
Pal
Bitmap
Books
Fam
Intrface
Obj
Mesh
Strings
Motions
but don't delete the movies, crfs or the res folder! Next, reinstall the mission you want to play and it should load properly.

Or use FMSel to avoid problemos.
I imagine Voodoo47 is sick and tired of repeating himself on this issue.

Right, but a lot of people prefer Darkloader. Just saying "Use FMSel!" is not really fixing Lockpicker's issues.

Nor do I preach dogmatism. I like DarkLoader, but am just as comfortable with FMSel. The latter has some definite benefits.
I think most folks get into trouble by either (1) not installing Thief via TafferPatcher (TP); or (2) screwing around with TP's settings without really knowing what they're doing. I know for a fact that I'm too stupid to mess around with tweaks, so I leave well enough alone and just let TP install the defaults. Guess what? I never have problems getting DL to properly run a mission.
Knocketh on wood.
