To put some DromEd mathematics in the topic, here's some map dimensions from Thief Wikia:
Thieves' Guild:
Height: 680DU or 567FT
Width: 550DU or 458FT
Vertical: 90DU or 75FT
Haunted Cathedral:
Height: 626DU 523FT
Width: 790DU 658FT
Vertical: not specified, but I measure around 150 DU from lowest to highest point
Soul Forge:
Height: 1016DU 847FT
Width: 626DU 522FT
Note that droomed units into feet transition is done by comparing Bafford's Scepter, which is claimed to be three feet in length, by Grimworth & de Perrin's letter.
You can now make your comparisons.

Nice method to compare :thumb:
So, staying on what you have said, Soulforge is the largest level, That's incredible! An entire building bigger than any single part of the city.

I'm playing Thief: The Dark Project (Gold) for the first time now, and this is by far the longest mission so far. I just found the Safe Key and I have still yet to complete a single objective other than making it inside the guild. Is this the longest mission in the game?
If it's your first time to Thief then it's a bit of a shock just how huge that mission is compared to the other missions in Thief 1... I presume because it was added to the "Gold" version of Thief 1 and had the Thief 2 mentality of huge HUGE levels!
I distinctly remember it taking something like twenty minutes to get from one end of the level to the other, running, with no AI obstacles in the way. I may be wrong in that, but I couldn't believe how big it was.
I also remember needing a key from one end of the level and running to the other end, grabbing the first key I saw, running back, and discovering it was the wrong key. So had to run back and search and think a bit more properly.
God I was a little idiot back then. I should replay it PROPERLY!

As a matter of fact, the
Lost City map (Thief 1, not Thief 2 version, non combined with Assassins) is around 1200x600 DU horizontal and around 350 DU from lowest to highest point.
The
Bonehoard is 820x810 DU which doesn't look large, but in square DU becomes larger than the Soulforge.
I'd say that even though
Thieves Guild is quite a maze it is a moderately large map, bigger than the Ambush city area.
Since DentonSHODAN has started a very nice topic here, it might be interesting which is the smallest map.
Running Interference holds the record with just 260x290 DU, which is smaller than A Keeper's Training.

Funny you mention, because Thieves' Guild is the level I hate most in Thief. Huge, maze-like, and boring. I really don't like any of the Gold-exclusive missions, but the guild holds a special place of contempt in my heart. Every time I replay it a part of my soul dies. Then The Sword rolls around and that piece is returned.

I loved Thieves' Guild. I got a very thiefy feeling the first time I decended down into the Overlord's Fancy via the chimney... The setting was great, with the thieves living down in lairs scattered around the sewers, the conflict between Donald and Reuben, and Garrett as a third party intruder... IMO brilliant. :D

See, I loved the opening - sneaking through the club. That whole part was excellent. And being a thief among thieves was cool tool. And it DID have a good story to it.
I just found the level far too large and complex for it's own good. It could have benefited from a trimming and some more intelligent level design. I have nothing against large levels, but the cramped design and limited artistic variety of the guild led to boredom for myself.
Hell, I'd rather sneak around Soulforge all day and fabricate useless crap from Mechanist machines.

Can you refresh my memory, how you have to do in Running Interference?
and please remember the spoilers for those who have still to play it ;).

Help Basso rescue Jenivere from Lady Rumford so they can run away and get married.

Ah, ok. Thanks :) Then it's the first one. Strange anyway, we have also a large estate courtyard there...
