Bring up the keyboard settings of Thief and search for the entry "Screenshot" and assign any key you prefer.
Simply press the assigned key while playing the game to take a screenshot.
If you're using Thief 1.18, the screenshots will be saved right to the Thief main directory. When using 1.19 (NewDark), they will be saved in "YourThiefFolder\Screenshots".

Worst case scenario, you can always try using the printscreen button. The downside of this is that you'll need a program like Paint to put the image in, as well as having to quit the game to paste it. Try using the in-game screenshot function first, though.

If memory serves, NewDark defaults to enabling PrintScreen as the key to take screenshots.

correct. the default format is png, but it can be changed in the cfg files.

For the record, at this point I just leave Fraps on all the time, for all games I play, so it's the same key to take screenshots (or videos) for all games. And I know it's always there if I want to take a screenshot of anything. People can do whatever they want. I'm just saying that's worked well for me.
