First time i used the GEP gun -- and it was insanely frustrating. But the second time through i used the sniper rifle -- it was much easier with it.
Still, that's probably the hardest level in the game -- i guess it's cause they don't lure you into the difficulty of the terrorists. They just slap you in the face with the terrorists and they don't get much harder throughout the game (well, the standard NSF terrorist.)

A note on the demo: If not for being able to play the second level, Deus Ex would have stayed very low on my "buy priority" list. Thankfully, though, the second level was awesome and very open-ended. That fascinated me.
The graphics aren't bland at all. Perhaps you should try some gamma adjustments and other tweaks to your display/lighting to get it looking a little more colorful. I will say that the game is not a rainbow of colors, but it really shouldn't be, either.
Ignatios: I never used the sniper rifle. I tried it for one play-through, but I found it to be an insanely expensive use of skill points when I could learn pistol and put a scope and many accuracy mods on it. Not to mention the fact that game contained far more ammo clips for the pistol.

Ah, the sniper rifle is the first thing I develop to Master level. Don't forget you can shoot open many locked doors, those glass cabinets scattered about with various goodies inside, take out cameras and even gun turrets. I've found that, while not abundant, there's plenty of sniper ammo to be had. It's far more plentiful than lockpicks and tools.

If you are still hesitant, do try the second level of the demo to get a hint at what this game really is (tough I doubt you'll ever realize what the game really is until you've finished. I've not quite finished it yet (2 or 3 levels remaining), and you never stop to find new reasons to be pleased you have bought that game.

I was hooked right from the start. I only played the first demo that came out, before heading straight down to the shops the moment the game was released. It's a superb game because of its open-endedness, its intense storyline and (IMO) superb graphics and sound (and hence overall atmosphere). I got to the ship level, got stuck and gave up for about 6 months, but I went back to it about two days ago, because I was running out of things to play and its barely been switched off since! In my opinion, a game is really good if you keep saying to yourself, "I'll just get past this bit, then I'll switch it off for tonight.", then something else happens, and you want to get past that bit, etc...

The New York levels are slummy and at night; they're not supposed to have garish graphics.Game looks best with a Voodoo card anyways.

When I first started playing I attempted to use the sniper rifle to do some of the things you mentioned, such as taking out cameras, etc., but it never seemed to have any effect, so I gave up. Is my skill just not high enough, do I need an improved damage mod, or different ammo?

T0rp0r, you must gain the master level on sniper rifle to take out cameras and shoot open doors, on other levels the damage is not enough to do so.

I didn't even get five minutes into the demo before I decided to quit, but I bought Deus Ex off of the shelf the first day it was available here. I think that Liberty Isle is the worst level in the entire game, but it was essentially a thrill ride from when I overheard the conversation between the NSF and thug, then threw one of their own gas grenades in there. As for the opening weapon choice, I usually pick the GEP gun. You can get a crossbow from any of the blue thugs, and some of the NSF on that level. There is also one NSF with a sniper rifle near the security bot's patrol area. It's always a good idea to save before approaching an enemy sniper though. I'll never forget suddenly collapsing into a pool of my own blood from a headshot after playing over two hours without saving.
