I've just finished Dark Messiah of M&M again and I can't help but feel jealouse of those necromancers that can raise zombies to help them. I wish I had a spell like that. Even if the zombie would be useless it would at least attract enemies (I think...). Anyway, my point is, since playing Arx Fatalis (for the 10th time) I can't seem to find any game that actually has any necromancer style spells (ressurections, reanimations, undead summonings, whatever). Well sure there are some summonings in ES Oblivion and there's a full necro class in Diablo 2, but I've pretty much drained the last drop of fun I could from those.
So I was wondering if you people know of any other rpgs that let you be a necromancer. I'm sure there are more out there. Anything you could recommend?

Maybe not what you are looking for, but some older games come to mind.
Diablo 2 or many of the various Black Isle/Bioware Forgotten Realms games for example. Icewind Dale 1&2 especially.
As far as CRPGs go I'm enjoying (

Zygo, I think that's a necrophile that you're thinking of.
If you're into D&D-based games, you could always give Temple of Elemental Evil a whirl. Just remember to look for the latest patch and the Circle of Eight mod (w/ Mod Runner thing).
ToEE is kinda short, and is buggy as hell until patched, but its a rather solid game, and allows you to raise undead, if you happen to have an evil Cleric in your party.

Also, if you're looking for something multiplayer, I'd suggest either Guild Wars or one of the Ultima Online freeshards. Guild Wars has no subscription fee, and the Necromancer is one of the playable classes. Of course, you can get the UO: Mondain's Legacy client and, after patching, play on one of the freeshards; I'd suggest UOGamers: Demise if you're not into getting killed within 10 steps of the city limits.

Sacrifice and King's Bounty both let you do so, as mentioned. Animate Dead is friggin abusive in sacrifice, though the necromancer skills in KB leave a lot to be desired. And neither are RPGs.
And it's not necrophilia in KB - you have to return her to humanity before you can score with her. Then you can turn her back into a zombie. Necrophilia does feature prominently in a modern title, but it's an FPS and we don't like to talk about it.
If we're including strategy games, there's always good ol' master of magic. Got a whole tree devoted to that kind of grave robbing.

Do tell what the name of this FPS is. Unless you mean Fahrenheit, which is a 3rd person adventure game.
