Since you liked Oblivion, you could try the Gothic series (well the first one doesn't really have any necromancer spells, just a couple of scrolls, but 2 & 3 are OK in that regard).
You can't play as a necromancer but if you play as a mage you can learn some raise undead spells like Goblin Skeleton, Summon Wolf, Create Skeleton, Awaken Golem, Summon Demon, Army of Darkness etc. plus some other spells necromancers would probably use like Uzariel's Wave of Death, Death to the Undead, Terror, Bloodlust etc.
EDIT:
There is a RPG called Summoner, where, like the name suggests, you can summon different creatures, but I haven't played a lot of it because the game became boring hack n' slash after a promising start. But you could check it out.

I did play the Gothic games, just forgot to mention them. They're a blast.
Saw Guild Wars mentioned, but I'm not sure I have enough time for that.
Also, I don't mind how old games are as long as they're fun to play, so really, this is a pretty neat list.:)

If you don't care about PvP, the high-level extra dungeons or armors with unique skins (which don't have better stats than the best normal armor), you can easily play GW without worrying about how much time you have to spend.

World of Warcraft has the Warlock and Death Knight classes. Warlocks summon demons to fight by their sides. Death Knights summon undeads.

Yeah. You could raise almost everything including mini-bosses or have a zombie sheep/donkey following you around xD
Unfortunately they arent that smart (hey folks how bout one of you seven guys attack that other thing that tries to get thru the door you are blocking with your sit-in or whatever you are doing now), still fun tho :devil:
Come to think of it that game started really really boring but became increasingly funky with all those strange weapons (ice-spewing dragon head? blood sucking scythe?) and spells (ok im done watching your puny bullets richocet off my shield and hit you back, have some laughing skulls).

You could give a whack at Age of Wonders, which lets you play as the Undead. Though that's more of a strategy game than a RPG.

The ridiculously fun tho ridiculously unbalanced mod for the original Half-Life, Surprise, let you throw headcrabs at enemies. When a headcrab killed someone, the corpse would get turned into a (hl) zombie. IIRC being killed by a zombie had the same effect.
